Homemade Cashew Butter PLUS What To Do With All Those Cool Swanson Organic Culinary Oils

As a follow-up to my last better-than-store-bought adventure... I finally got around to making a nut butter! I meant to make almond butter, but after a mental lapse at the grocery store I found myself with a pound of cashews. Ah, well. I grabbed some Swanson Macadamia Nut Oil and the food processor and got to work. I'll skip the details and let you read Ashley's instructions for nut butters in her blog post. (Plus she takes better pictures than I do!) This homemade cashew butter turned out creamy and sweet and delicious. Just as importantly, I know exactly what is—and isn't—in it.
 

Before I started working at Swanson, the 'oil' section of my pantry was pretty boring. Since we sell quite the assortment of healthy culinary oils, I'm learning about all their health benefits and finding tasty ways to use them. A few ideas:

  • In addition to making a great cashew butter, the Swanson Macadamia Nut Oil is also featured in our sweet and creamy Raisin Nut Bars.
  • I love to use the Organic Hemp Seed Oil on grilled potato wedges: Slice parboiled Russet potatoes into wedges, toss with salt, pepper, and just enough organic hemp seed oil to coat. Grill in a veggie basket until browned and they've crisped up around the edges.
  • The Organic Sesame Seed Oil is perfect for spicy sauteed kale: remove the stems from a bunch of kale (it looks Raisin and Walnut Saladlike a lot, but it cooks down quite a bit) and chop the leaves into large pieces. Saute 2 cloves of garlic (minced) in the sesame seed oil, add the kale and a couple tablespoons of water and cover the pan. Let it cook for about 3 minutes stirring occasionally. Once it's wilted, add a teaspoon of soy sauce or liquid aminos and some crushed red pepper. Quick and delicious!
  • One of my favorite ways to prepare a mild fish like Tilapia is to spread a spicy sauce like wasabi paste or Sriracha on it, coat it in panko and cook it up with Swanson Organic Coconut Oil.
  • The walnut oil makes an absolutely delicious dressing for our Raisin & Walnut Salad.

I haven't tried the organic avocado oil or pumpkin seed oil yet, which is surprising since I LOVE both avocado and pumpkin. Have you tried them? I'm open to suggestions!
