Do not overmix. Some lumps should remain., Preheat skillet to medium heat, about 325ºF. Lightly oil hot griddle. Pour scant 1/4-cup portions of batter and cook until bubbles begin to form on the top, about 2 minutes. Flip and cook another 1-2 minutes, until done.
