Unlike water-soluble ascorbic acid, fat-soluble ascorbyl palmitate exerts its antioxidant potential of vitamin C directly into the lipids of molecules throughout your body for optimized free radical protection at the cellular level. In vitro studies have shown that ascorbyl palmitate may be more effective as an antioxidant in protecting lipids from peroxidation than water-soluble vitamin C.
