Suggested Use:
GLUTEN FREE POUND CAKE, 1 cup Brown Rice Flower, ¾ cup Bob's Red Mill® Sorghum Flour, ¼ cup Tapioca Starch, 2 tsp Baking Powder, 1 tsp Xanthan Gum, ½ tsp Kosher Salt, 1 cup unsalted Butter, softened, 1 cup Sugar, 4 Eggs, 2 tsp Vanilla Extract, Preheat oven to 350℉. Grease a 9 x 5-inch loaf pan. In a medium bowl, whisk together flours, tapioca starch, baking powder, xanthan gum and salt., In a separate bowl, cream butter and sugar until light and fluffy, about 5 minutes. Add eggs one at a time, mixing well after each one. Add vanilla extract and mix until incorporated. Add the dry ingredients to the wet and mix until well blended., Spread batter into prepared pan and bake for 60 minutes, or until a toothpick inserted in the center comes out clean. Cool cake in pan for 10 minutes, then remove cake from pan and cool completely on a wire rack., Makes 8-12 servings.
