The mild sweetness of carob powder is due to the naturally occurring sugars in the carob. Carob (Ceratonia siliqua) or St. John's Bread comes from the pods of an evergreen tree native to the Eastern Mediterranean area. Unlike cocoa beans, Carob powder doesn't contain the stimulant theobromine and has significantly less fat. Can be used as a substitute for cocoa powder in milk and baking recipes. Vegan. Suggested Use:
When cooking with Carob, substitute 1.5 to 2 parts carob powder for every 1 part cocoa powder called for in a recipe. Due to carob powder's sweetness you may need to decrease the amount of sugar used.
