    INGREDIENT: Whole Grain Teff.

    OVERNIGHT INJERA A traditional Ethiopian flatbread

    • 1 ½ cups Water
    • 1 cup Bob's Red Mill® Teff Flour
    • ½ tsp Salt

    In a deep container with a lid, whisk together water, flour and salt. Cover and let rest in the refrigerator overnight or for at least 8 hours.

    To cook the injera, heat a nonstick pan over medium heat. Use a liquid measuring cup to pour the batter into the hot pan in a thin spiral. Let cook until bubbles begin to form on the surface and the top begins to darken and dry, 3-4 minutes. Keep warm or serve at room temperature.

    Makes 8-12 servings.

    Store in a cool, dry place. Keeps best if refrigerated or frozen after opening.
