Works just like it says. 1 to 1.

Works like it says, 1 to 1. I used it in yeast rolls, cookies twice and bread twice.I didn't notice any difference from regular flour. It is a little finer, but that makes it easier to sift and incorporate. I like this product, it's a good quality, fair priced product.
