- Peel and shred sweet potato using a cheese grater. Set aside.
- In a large mixing bowl, lightly beat the eggs. Add the sweet potato and chopped scallions to the egg and mix to combine.
- In a small bowl, combine coconut flour, arrowroot, salt, black pepper and onion powder.
- Add dry ingredients to the large bowl and combine.
- In a frying pan, melt coconut oil over medium heat.
- Using your hands, form about 2-3 tbsp of the fritter mixture into balls then flatten gently.
- Drop fritters into hot oil and fry for about 3–4 minutes on each side, until browned and crisp.
