Ginger Lentil Soup

  • 2 cubes vegetable bouillon
  • 4 cups water
  • 2 teaspoons extra virgin olive oil
  • 3 medium carrots, chopped
  • 1 medium onion, chopped
  • 1/4 teaspoon ginger
  • 1/4 teaspoon garlic powder
  • 1 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup green lentils, drained and rinsed
  • 14 oz of crushed tomatoes
  • Instructions:
      1. Bring 4 cups of water to a boil and dissolve bouillon cubes. Set aside. 2. Heat oil in a large saucepan over medium heat. Add carrots and onion, cover and cook one minute. 3. Add in ginger, garlic, curry, salt and pepper and cook for an additional 30 seconds. 4. Stir in broth and lentils. Bring to a boil. Reduce heat and simmer 25-30 minutes or until lentils are tender. 5. Stir in tomatoes, cover and simmer 5 minutes.
