Fruity frozen cream bars will soon become a favorite dessert. These bars are absolutely delicious and taste a lot like cheesecake, but they’re actually dairy free. They use all whole food, plant-based ingredients that not only offer a lot of nutrition but give us a naturally colorful dessert.
The entire recipe is free of refined sugar and can be left as-is for a traditional cheesecake bar, but it’s fun to get creative and add different ingredients like strawberries and blue spirulina like this recipe to make these bars full of flavor and color.

- Process almonds, dates and sea salt in food processor until well combined, should stick together (may need to add 1 tbsp water).
- Press into parchment paper-lined 8x8 baking pan.
- Set in freezer while preparing filling.
- Soak cashews in boiling water for 5 min, then drain and add to food processor or blender. Add coconut oil, maple syrup, lemon juice, water, vanilla extract and sea salt and blend until a smooth consistency.
- Divide this filling mixture into three bowls.
- Add one bowl of filling to food processor along with 1 cup strawberries, then pour on top of crust and spread in even layer, pop back in freezer to harden for 30 min.
- Take another bowl of filling and pour on top of red layer, spread evenly and then return to freezer for another 30 min.
- Take the third bowl and add to food processor along with the blue spirulina powder and combine. Then add as final layer and spread evenly.
- Can top with the optional coconut and strawberries. Return to freezer and when frozen, cut into 16 bars. Keep frozen!
