Homemade Beet Juice Powder Hummus

Hummus that has a stunning reddish-pink color and is packed with benefits? Yes, please! Say hello to fiber, folate, vitamin C and antioxidants in a delicious dip form. All these nutrients come from beet juice powder making this hummus a fun and easy way to enjoy the nutritional powerhouse of beets.

Serving size: 1/4 cup
Ingredients:
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup of tahini
  • Juice of 1 lemon
  • 3 cloves of garlic, or 1 tbsp of pre-minced garlic
  • 2 tbsp of beet juice powder
  • 3 tbsp of extra virgin olive oil
  • 1 tsp of cumin
  • 1/2 tsp salt
  • /1/2 tsp of pepper
  • 1/2 cup of ice water
  • Optional for garnish: extra virgin olive oil, feta and freshly chopped parsley
    Instructions:
    1. Add chickpeas, tahini, lemon juice, garlic, beet juice powder, cumin, salt and pepper to a blender or food processor.
    2. Blend for about 2 minutes or until mixture becomes smooth.
    3. Turn blender to a medium speed and slowly stream in extra virgin olive oil until combined.
    4. Next, add in ice water little by little until you reach your desired consistency.
    5. Optional: Garnish with extra virgin olive oil, feta and freshly chopped parsley. Then serve with pita chips or fresh veggies and enjoy!

      Store in tightly sealed container in your fridge.

      Keeps well for 3 to 4 days.
