It's so rewearding to open a jar of your homemade apricot spread and hear those you love say, “Oh wow. That’s good! You made this?” And you smile, knowing how easy it was to make. Even better, this spread makes the perfect gift. Honestly, who doesn’t love homemade fruit spread? No one. Especially when there are only 45 calories per serving!

Serving size: 2 tablespoons
Ingredients:
  • 2 cups water
  • 1 teaspoon lemon juice
  • 2 packages Turkish apricots
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon (ground)
  • 1/2 teaspoon nutmeg (ground)
  • 1/2 teaspoon ginger (ground)
  • 1/2 teaspoon cloves (ground)
  • Instructions:
    1. Bring water and lemon juice to a boil in a pot. Add dried apricots. Cover pot with lid and let cook until the apricots are tender, about 5-10 minutes.
    2. Let cool and then pour into a blender or food processor and blend until it is as smooth as you like it.
    3. Slowly fold in vanilla and spices while tasting to get the seasonings to your liking. Store in an airtight jar or container in the fridge. It will hold for at least one week.
