And just like the tea, they're full of good nutrition thanks to ingredients like organic rolled oats, dried cherries, organic walnuts and organic apricots–grown without the use of chemical pesticides, herbicides or fertilizers. The cherries alone boast 17 powerful antioxidants and natural sweetness without any refined sugar. So pick your preferred tea, brew a cup and relax with a freshly baked Apricot Cherry Tea Biscuit. They're the perfect pair on a cold winter evening.
Ingredients:
  • 2 cups unbleached flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup organic extra thick rolled oats
  • 1/2 cup pure fructose
  • 1/2 cup organic Turkish apricots, chopped
  • 1/2 cup dried cherries, chopped
  • 1/2 cup natural cold-pressed macadamia nut oil
  • 1 teaspoon pure vanilla extract
  • 1/4 cup plain skim or soy milk
  • 2 egg whites
  • 1 cup organic walnuts, chopped
  • Instructions:
    1. Preheat oven to 350° F.
    2. Sift the flour, baking soda, baking powder, and salt together into a large mixing bowl.
    3. Mix in the fructose, oats, cherries and apricots. Stir in the oil, vanilla, and soy milk, mixing well.
    4. Take a heaping teaspoon and roll into a ball. Roll the ball into egg whites then roll in chopped walnuts. Place onto a non stick or parchment paper lined cookie sheet.
    5. Bake for 12 to 15 minutes, until just beginning to brown around the edges.
