In a food processor or mixer, blend together the all-purpose flour, coconut flour and eggs until smooth. Mix in the
fructose and vanilla and blend well. Slowly add the skim milk and mix well to make a smooth batter. Let the batter
sit for 30 minutes to an hour.
In the microwave, melt the coconut oil and pour it in the bottom of a 9 x 13 glass baking dish. Tip the dish and swirl
the coconut oil so that it evenly coats the bottom and sides. Pour the batter into the pan and add the chopped prunes.
Bake at 400° F for 30 minutes. Meanwhile, mix the fructose and cinnamon together. Remove bars from the oven and
sprinkle topping mixture over the bars. Turn the oven off and return the bars to the oven and leave in the oven for 30
more minutes.
Makes 24 bars. Serving size 1 bar.
