Beat walnut oil, egg, skim milk and vanilla in medium size bowl. Sift in flour, fructose, baking soda and salt and mix until moist. Fold in cherries and walnuts. Grease bread pan with coconut oil and lightly flour pan. Pour the mixture into the pan. Bake at 400° F for 45 minutes or until toothpick comes out clean.
Makes 12 slices. Serving size 1 slice.
