Swanson Banana Coconut Muffins
Directions:
1. Preheat oven to 350 degrees.
2. Mix coconut flour, baking powder and nutmeg.
3. In a separate mixing bowl, beat eggs gradually, along with the coconut oil, fructose, vanilla
and salt.
4. Add the mashed bananas to the egg and oil mixture. Continue mixing.
5. Add in the flour mixture and blend well.
6. When blended, fold in the chopped walnuts. (optional)
7. Grease 12 muffin cups with coconut oil and fill the cups with the batter.
8. Bake at 350 degrees for 20 minutes.
Makes 12 muffins. Serving Size 1 muffin.
