To use in place of fresh coconut, soak in warm water until soft. For toasted coconut, spread in a shallow pan and toast for five minutes. Delicious addition to granolas, cookies and cakes.

Suggested Use:
Great for topping baked goods Delicious addition to granolas, cookies and cakes, VEGAN "BACON" BITS, • 2 Tbsp Soy Sauce, • 2 Tbsp Molasses, • 2 Tbsp Liquid Smoke, • 1 Tbsp Extra Virgin Olive Oil, • 1 Tbsp Cider Vinegar, • 3 cups Bob's Red Mill Coconut Flakes, Preheat oven to 325℉. Line a rimmed baking sheet with parchment paper or a silicon pad, or spray with nonstick spray., Whisk together soy sauce, molasses, liquid smoke, olive oil and vinegar. Add coconut flakes and mix well. Let sit for 10 minutes or until the coconut absorbs all the liquid. Spread the coconut in an even layer on the prepared baking sheet. Bake at 325℉ until deeply toasted, about 15-20 minutes. Stir often, about every 3 minutes. Let "bacon" bits cool completely, then store in an airtight container. Makes 3 cups.
