Preheat oven to 350° F. Spray a 9 x 13 x 2 pan with non stick baking spray. Separate egg whites from the yolk and set aside to reach room temperature. Use an electric mixer to beat egg whites until they form a soft peak. Set aside.
Mix applesauce, fructose and vanilla. Combine the dry ingredients together and then fold into the wet ingredients. With a wooden spoon, fold in apples, raisins and walnuts. Take the egg whites and gently fold into the mixture.
Spread batter in the pan and bake for 30 minutes, or until the cake tests done. Turn out onto a rack and cool completely before cutting into 18 squares.
*Chef’s recommendation: let the apple cake sit overnight before eating. The longer the cake sits, the moister it becomes and the flavors and textures ripen together.
