Line a small plate or dish with parchment paper or spray with non-stick spray. Combine macadamia nut oil, vitamin C powder, cinnamon, honey, baking chocolate and vanilla extract in a saucepan. Melt together (do not boil). Stir in cocoa powder until smooth. Spread mixture onto the prepared plate. Top the chocolate with almonds (optional). Score the surface lightly (for easier cutting). Refrigerate.
