    Bob's Red Mill All Purpose Baking Flour is gluten free and specially designed for those sensitive to gluten. It features a blend of gluten-free flours from potatoes, sorghum, tapioca and garbanzo and fava beans. It's easy to replace regular flour with Bob's Red Mill's gluten free flour because it can be exchanged at a 1:1 ratio. Xanthan gum may be added to the flour for better results. Use Bob's Red Mill All Purpose Baking Flour the next time you're making cakes, cookies, breads, muffins, pancakes and waffles.

    HOW TO USE THIS PRODUCT You can replace wheat flour with Bob's Red Mill Gluten Free All-Purpose Baking Flour in a variety of recipes. We recommend that you add xanthan gum for best results when substituting Gluten Free All Purpose Baking Flour (see chart below). Yeasted breads area little more difficult and may require eggs, vinegar and possibly more liquid to add to the recipe

    Quantity of Xanthan Gum

    • ¼ tsp per cup of flour for Cookies
    • ½ tsp per cup of flour for Cakes
    • ¾ tsp per cup of flour for Muffins and Quick Breads
    • 1 to 1½ tsp per cup of flour for Breads
    • 2 tsp per cup of flour for Pizza Crusts

    Use the quantities suggested of Xanthan Gum per cup of flour used. For example, if you are making cookies with 3 cups of flour, you would add ¾ tsp Xanthan Gum.
