1. Preheat oven to 400° F. Rinse and halve a beautiful Delicata squash! Scoop out the seeds (for roasting, if you wish). Place squash halves face down in a baking dish with 1/4 inch water and bake for 1 hour. Scoop out squash meat.
2. Rinse, peel, core and slice apples.
3. Combine squash and apples with all ingredients in a crockpot set on high. Stir well, and leave for 2 hours.
4. Remove from heat, blend and garnish with carrot shavings and shredded asiago cheese!
5. Rejoice and stuff your face!
Makes 10 servings. Serving size approximately 3/4 cup.
