Spiced Apple Cake

Recreate the memories of Grandma’s kitchen with the warm, homey scent of apples and cinnamon with this delicious spiced apple cake recipe. It tastes as good as it looks, making it easy to savor each bit of this moist, dense cake. It’s easy to prepare and tastes even better the next day after the flavors have blended together.

Ingredients:
  • 6 egg whites
  • 1 cup apple sauce
  • 1/2 cup erythritol
  • 1 teaspoon vanilla extract
  • 4 cups apples, peeled and grated or chopped
  • 2 cups pastry flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cloves (ground)
  • 1 teaspoon cinnamon (ground)
  • 1/2 cup seedless raisins
  • 1/2 cup walnuts, chopped
  • Instructions:
    1. Preheat oven to 350° F. Spray a 9 x 13 x 2 pan with non-stick baking spray. Separate egg whites from the yolk and set aside to reach room temperature. Use an electric mixer to beat egg whites until they form a soft peak. Set aside. 
    2. Mix applesauce, erythritol and vanilla. Combine the dry ingredients together and then fold into the wet ingredients. With a wooden spoon, fold in apples, raisins and walnuts. Take the egg whites and gently fold into the mixture. 
    3. Spread batter in the pan and bake for 30 minutes or until the cake tests done. Turn it out onto a rack and cool completely before cutting into 18 squares.
