Protein-Packed Scotcheroos

Scotcheroos are the perfect easy treat for any occasion. Why not give them a makeover? We skipped the corn syrup and added a little extra protein. This full potential treat is sure to satisfy your sweet tooth and give you a fun new way to discover the power behind the powder.
A take on the Midwest classic we know and love.
Time: 1 Hour
Serves: 9
Serving size: 1 Square
Ingredients:
  • 3/4 cup of peanut butter
  • 1/3 cup of honey
  • 1 tsp of salt
  • 1 scoop of Full Potential vanilla whey protein (You can add two scoops for extra protein and a less chewy bar)
  • 1 cup of dark chocolate chips
  • 1/2 cup of butterscotch chips
  • 5 cups of crispy rice cereal
  • Instructions:
    1. Line an 8x8 pan with parchment paper.
    2. In large mixing bowl combine peanut butter and honey. Then add in your protein powder and salt; mix until combined.
    3. Next, fold in the crispy rice cereal one cup at a time until evenly coated.
    4. Once the mixture is fully coated, scoop it out into the 8x8 pan, pack down with a rubber spatula to achieve a compact treat. Then place pan in the fridge for 5-10 minutes.
    5. Add dark chocolate chips and butterscotch chips to a glass measuring cup and microwave in 15 second intervals for 1 ½ minutes, or until fully melted.
    6. Pour chocolate mixture over set bars and spread evenly. Let stand in fridge until firm then cut into 9 even bars. Enjoy!
    7. Store in a tightly sealed container in the fridge—good up to one week
