Fruity Frozen Cream Bars

Fruity frozen cream bars will soon become a favorite dessert. These bars are absolutely delicious and taste a lot like cheesecake, but they’re actually dairy free. They use all whole food, plant-based ingredients that not only offer a lot of nutrition but give us a naturally colorful dessert.
The entire recipe is free of refined sugar and can be left as-is for a traditional cheesecake bar, but it’s fun to get creative and add different ingredients like strawberries and blue spirulina like this recipe to make these bars full of flavor and color.

Ingredients:
  • 1.4 cups almonds
  • 1 cup dates, pitted
  • 1/8 tsp sea salt
  • *may need to add 1 tbsp water
  • 1.5 cups cashews, soaked and drained
  • Half cup refined coconut oil, melted (flavor-free coconut oil)
  • 1/3 cup pure maple syrup
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 cup strawberries, chopped
  • 1 scoop blue spirulina powder – KOS, Bolt from the Blue
  • Optional Toppings:
  • 2 tbsp unsweetened coconut
  • 1/4 cup strawberries, chopped
  • Instructions:
    1. Process almonds, dates and sea salt in food processor until well combined, should stick together (may need to add 1 tbsp water).
    2. Press into parchment paper-lined 8x8 baking pan.
    3. Set in freezer while preparing filling.
    4. Soak cashews in boiling water for 5 min, then drain and add to food processor or blender. Add coconut oil, maple syrup, lemon juice, water, vanilla extract and sea salt and blend until a smooth consistency.
    5. Divide this filling mixture into three bowls.
    6. Add one bowl of filling to food processor along with 1 cup strawberries, then pour on top of crust and spread in even layer, pop back in freezer to harden for 30 min.
    7. Take another bowl of filling and pour on top of red layer, spread evenly and then return to freezer for another 30 min.
    8. Take the third bowl and add to food processor along with the blue spirulina powder and combine. Then add as final layer and spread evenly.
    9. Can top with the optional coconut and strawberries. Return to freezer and when frozen, cut into 16 bars. Keep frozen!
