When it comes to the holidays, cranberries are an often overlooked side that don’t get enough credit. Well, this year, we’re giving cranberries the fresh update they deserve. This cranberry salsa is not only easy to make, but it’s also healthy and absolutely delicious.
This salsa is a perfectly tangy, a little bit sweet and has just the right kick of spice!
Time: 10 minutes (+ 2 hours refrigeration)
Serves: 16
Serving size: 1/4 cup
Ingredients:
  • 3 cups cranberries (fresh/frozen, not dried)
  • 1 apple, chopped
  • 1/2 red pepper, chopped
  • 1/4 red onion, chopped
  • 1 jalapeno, chopped
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1/4 cup fresh cilantro
  • 1 Tbsp lemon juice
  • 1/2 tsp sea salt + 1/2 tsp black pepper
  • Instructions:
    1. Combine all ingredients in blender and pulse until combined with desired consistency.
    2. Refrigerate for at least 2 hours to allow flavors to combine
