Unhealthy oil Safflower oil is one of the worst oils you can eat from a health standpoint. Polyunsaturated fats should be a small fraction of the diet (~4% of total calories). To achieve this, do not eat seed oils such as soybean oil, corn oil, safflower oil, sunflower oil, canola oil, or the like. Instead, eat oils that are actually good for you like coconut oil, palm oil, butter and tallow from grass-fed animals. April 17, 2013
