Peel, chop or slice all vegetables. In a large pot over medium heat, sauté oil, onions, celery and carrots until onion is translucent. Add garlic and parsnips. Cook for another 5 minutes.
Add broth, tomatoes and bay leaves and bring to a boil. Add cabbage, zucchini and pasta. Cook for 7 to 10 minutes.
Add beans and parsley. Bring to another boil and simmer for 15 to 20 minutes. Remove bay leaves and serve!
