Yellow Dock (Sheep sorrel, Sour dock, chukka, Rumex crispus)
Found throughout North America, yellow dock's roots are used in health applications while the leaf stalks are used for food. Like other bitter herbs, yellow dock is thought to stimulate bile, saliva and digestive enzyme production. The active components, anthraquinones, help with gastrointestinal support. Yellow dock is traditionally used to stimulate bile production in the liver.
