Grain-Free Protein Pancakes
Makes 8 medium pancakes
- 1 cup Navitas Organics® Grain-Free Flour Blend
- 3 Tbsp. coconut sugar
- 1 tsp. baking powder
- ½ tsp baking soda
- ¾ tsp. sea salt
- ½ tsp. cinnamon
- 1 egg
- 1 cup milk of choice
- 2 Tbsp. lemon juice
- 1 Tbsp. coconut oil, melted
- 1 tsp. vanilla extract
Coconut or preferred oil, for pan.
In a medium bowl, mix together the dry ingredients. In a larger bowl, beat the egg, then add the remaining wet ingredients and whisk to combine. Slowly add the dry ingredients to the wet and whisk until combined.
Lightly oil and heat a large pan or griddle over low heat. Spoon two tablespoons of batter per pancake into pan. Cook low and slow, until bubbles begin to appear in the center of each pancake. Flip and cook until set, about one minute more. Repeat with remaining batter. Top with fresh fruit, pure maple syrup or your favorite toppings. Enjoy!
