  • 1 tsp. salt
  • 2 Tbsp. Hodgson Mill Milled Flax Seed
  • 1 Tbsp. Vital Wheat Gluten, opt.
  • 2-1/2 cups Hodgson Mill Best for Bread Flour
  • 1-1/2 Tbsp. Non-fat dry milk
  • 1-1/2 tsp. Hodgson Mill Fast Rise Yeast

Add ingredients to the bread machine in the order suggested by the manufacturer.

Select basic cycle with a light or medium color setting. Yield: 1-1/2 pound loaf.

This is a staple in our house We don't eat wheat. I make buns with this flax, almond meal/flour, eggs and a bit of parmesan cheese in a muffin top pan. These buns are a daily staple in our house, most commonly using two as a sandwich bread substitute, or one toasted then split in half for morning egg sandwiches (like an English muffin). This flax, although not the golden flax that many like, is not over powering in flavor or bitter. To us it gives our buns a taste similar to a rich European rustic bread that we used to love.
