Heat the oven to 375° F. Beat butter, coconut oil, fructose, honey, vanilla, egg in a medium bowl on medium speed, scraping bowl constantly, until smooth. Sift in flour, baking soda, salt and cinnamon. Add coconut and flaxseeds. Roll a teaspoon of dough into a ball and place on an ungreased cookie sheet. Bake for 5 minutes. Remove from oven and gently flatten cookie with fingertips or bottom of a glass. Sprinkle the tops with additional cinnamon and fructose. Return to the oven and bake an additional 2 to 4 minutes or until a light golden color. Let stand 3 to 5 minutes on cookie sheet. Then remove with metal spatula and cool on a wire rack.
Makes 36 servings. Serving size 1.0cookie.
