Cream together softened (melted) coconut oil and turbinado sugar. Mix in egg, orange juice and orange zest. Once well incorporated, slowly mix in oats, ground cloves and flour. Gently fold in cranberries and walnuts.

Make small balls of cookie dough, flatten them, and then place on greased cookie sheet. Bake cookies at 350° F for 12 to 15 minutes.

Makes 48 servings. Serving size 1.0cookie.
