Goji Berry Thumbprint Cookies

Cookie Dough



In a medium saucepan, simmer all three ingredients for 20 minutes or until the goji berries are soft. Pour the mixture into a food processor and purée. Set the mixture aside and let cool.

Cookie Dough:

Preheat oven to 375° F. Cream together coconut oil, fructose, egg yolk, vanilla, orange zest and walnut oil. Sift flour and fold into cream mixture. Form into 1-inch balls. Dip each ball in slightly beaten egg white; then roll in finely chopped nuts. Place the balls about 1 inch apart on ungreased baking sheet. Bake 5 minutes. Remove from oven, quickly press thumb gently on top of each cookie and fill with goji berry filling. Return to oven and bake 10 minutes longer. Let cool.

Makes 14 servings. Serving size 1.0cookie.
