In a small saucepan, heat cherry juice over high heat. Whisk in cornstarch and brown sugar, and heat to boiling point. Add cherries and coat them with the mixture. Remove from heat momentarily to add brandy, and place back over heat. Simmer for ten minutes and remove from heat. Spoon hot fruit mix over low-fat vanilla ice cream.
Makes 4 servings. Serving size 1.0bowl.
