INGREDIENTS: POTATO CUBES AND SLICES, ONION, LEEK, CELERY, SCALLIONS, HERBS.

YOU WILL ALSO NEED:

  • 6 cups chicken broth,
  • 1-1/2 lbs baby red potatoes, chopped, not peeled
  • OR 24 oz. frozen hash brown potatoes
  • salt to taste and freshly ground black pepper
  • 1 cup light or heavy cream

40 MINUTES FROM STOVETOP TO TABLE

SERVES 5

HERE'S WHAT YOU DO: In a 3 or 4-quart pot bring broth to a boil. Add potato leek soup mix and potatoes, cover and simmer on low 30 minutes. Stir in cream, season with salt and pepper and allow to stand, covered, five minutes before serving. To serve chilled, prepare soup and refrigerate overnight. Use immersion blender or potato masher to puree soup. May need to add more cream if too thick. Serve with a dollop of sour cream on top of each bowl.

Rated 4 out of 5 by from Just tried this soup for the first time and found it to be very good. A little expensive, but when purchasing all ingredients alone, it was worth it. I liked the idea of adding the cream. Next time, I won't add the potatoes- maybe bacon or nothing.

Rated 5 out of 5 by from So tasty! This is one of my favorite Swanson grocery products. I'm a vegetarian, so I make it with the Better Than Bouillon Vegetarian No Chicken Base. I use fresh baby potatoes, half and half, and a good amount of kale. Add in crusty bread and it's a perfect dinner for a cold night!

Rated 4 out of 5 by from good at first, bad for leftovers I made a batch of this for dinner one night and brought the rest to work for lunch the next day. I liked how easy it was to make, though I'd recommend using a little less than the recommended amount of cream. It was just a little too creamy for me. It was tasty right after I made it, but the next day, it had separated and looked so gross in my container I didn't even want to eat it again.
