delicious I was blown away when I first tasted this. I just love it. It is VERY salty--but in a very balanced way. It adds a balancing tangy, saltiness to food that I find really delicious. It enhances so many foods--soups, leafy vegetables, potatoes--even things like tuna fish, or chili--I use it in cooking and right on my food. February 14, 2013
very tasty seasoning I love Ume vinegar and have replaced soy sauce with it. On hot grain with a little ghee it is delicious and helps alkalize the body. I would prefer a source not from Japan at this time, however. August 22, 2012
