love this I use teff flour and baked products turn out great, I mix it with other gluten free flour to make pizza, pancakes, a little goes a long way, so I eat less and I feel full. July 19, 2012
A magnificent Ancient Grain I was delighted to find the 1.5 lb bag at a reasonable price at Swanson Health because the only other option is a 25 lb bag from Bob's Red Mill and I have concerns about storing that large a bag. The food value of Teff is excellent. High in fiber and gluten free, this fine grain is a bit bitter but the recipes you use can compensate. After trying the recipe for Peanut Butter cookies on the package, I modified it to be more nutritious by substituting coconut oil for canola. I also switched to agave instead of the more expensive maple syrup. One bag will make a total of 9 dozen healthy cookies with a little buckwheat flour added to each batch. An easier flour to work with for GF baking. June 3, 2012
