I already made a 'rue' with it and it came out perfect. Although I think you wouldn't need the butter with this flour to use it as a thickener. Great for pre-breading or as a batter by itself. This is the next best flour. I can't wait to use it as a pizza dough or make a loaf of bread with it. Think I'll mix it with Bob's Red Mill Brown Rice Flour (also available here at Swanson), and see what kind of tasty bread I can make. Plus this is loaded with fiber! Price can't be beat as well!"
