DOWN-HOME BUCKWHEAT PANCAKES
Heat a lightly greased griddle or pan over medium-high heat. In a small bowl, whisk flour, salt and baking powder. In a medium bowl, whisk egg, molasses, milk and oil. Mix the dry ingredients into the wet until just combined, and then pour ¼-cup portions onto the hot griddle or pan. Cook until bubbly, then flip and cook until the cent is set, about 2-3 minutes per side. Serve immediately.
Makes 8 pancakes.

In wheat bread, use half buckwheat flour to add a unique, nutty flavor and darker color.
