    TIPS FOR USE

    1 Tbsp Bob's Red Mill Cornstarch = 2 tbsp Flour

    BANANA CREM PIE

    • One 9-inch Deep-Dish Pie Crust, baked
    • 3 cups Milk
    • ¾ cup Granulated Sugar
    • ½ Bob's Red Mill Cornstarch
    • ¼ tsp Salt
    • 3 Egg Yolks
    • 2 Tbsp Butter
    • 1 tsp Vanilla Extract
    • 3 cups sliced Bananas (about 4 large)
    • 2 cups Cream
    • ¼ cup Powdered Sugar

    Place milk in a medium pot and set over medium heat. In a small bowl, whisk together sugar, cornstarch, and salt. Add sugar mixture to the milk and bring to barely a simmer, whisking frequently. Meanwhile, place yolks in a medium sized bowl and whisk to incorporate.

    Pour about ½ of the milk mixture into the yolks, and whisk thoroughly, leave remaining milk mixture on the stove. Pour yolk mixture back into the put with the milk mixture. Stir continuously until the mixture begins to thicken and coats the back of a spoon. Remove from heat, add the butter and vanilla, and continue to stir until the butter has completely incorporated into the mixture. Gently fold in sliced bananas, then pour inter mixture into the baked pie crust, smoothing out any air pockets. Chill in refrigerator until set, at least 1 hour.

    To serve, whip cream with powder sugar to soft peaks. Pile whipped cream on top of pie, slice, and serve.

    Makes one 9-inch pie.
