Ingredients:
- 6 egg whites
- 1 cup apple sauce
- 1/2 cup erythritol
- 1 teaspoon vanilla extract
- 4 cups apples, peeled and grated or chopped
- 2 cups pastry flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cloves (ground)
- 1 teaspoon cinnamon (ground)
- 1/2 cup seedless raisins
- 1/2 cup walnuts, chopped
Instructions:
- Preheat oven to 350° F. Spray a 9 x 13 x 2 pan with non-stick baking spray. Separate egg whites from the yolk and set aside to reach room temperature. Use an electric mixer to beat egg whites until they form a soft peak. Set aside.
- Mix applesauce, erythritol and vanilla. Combine the dry ingredients together and then fold into the wet ingredients. With a wooden spoon, fold in apples, raisins and walnuts. Take the egg whites and gently fold into the mixture.
- Spread batter in the pan and bake for 30 minutes or until the cake tests done. Turn it out onto a rack and cool completely before cutting into 18 squares.
*Chef’s recommendation: let the apple cake sit overnight before eating. The longer the cake sits, the more moist it becomes and the flavors and textures ripen together.
