Baked Sweet & Sour Chicken Skewers

Try a new recipe tonight! Trust us when we say that these Baked Sweet & Sour Chicken Skewers will not disappoint. They’re flavorful, fun to make and much healthier than the greasy take-out option. We served this dish on skewers as an appetizer, but you could easily serve it over rice as an entrée. The recipe includes a homemade sweet & sour sauce, which is incredible by itself!

Ingredients:
***Chicken
  • 4 boneless chicken breasts
  • 3 eggs
  • 1/2 cup all purpose flour
  • 1 1/3 cup gluten free cornstarch
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ginger
  • 1/4 tsp onion powder
  • ***Sweet & Sour Sauce
  • 1/2 cup pineapple juice (from 20 oz. pineapple tidbits)
  • 1 cup red wine vinegar
  • 1 1/4 cup turbinado sugar
  • 1/4 cup + 2 tablespoons ketchup
  • 1 small onion, chopped
  • 1 1/2 tbsp liquid aminos
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 tsp crushed red pepper
  • 1/2 tsp ginger
  • ***Additional Ingredients
  • 1 20 oz. can pineapple tidbits
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 cup carrots, sliced
