I bought this product to use as a thickening agent for things such as puddings. It works great, gives you a nice, smooth product. I wasn't sure how much to use relative to something like wheat flour or cornstarch, but by experimentation, it seems to be about the same as cornstarch. For people who don't want to use corn based products, this is an alternative. October 30, 2011
