Sweet Potato Fritters

Peel and shred sweet potato using a cheese grater. Set aside.

In a large mixing bowl, lightly beat the eggs. Add the sweet potato and chopped scallions to the egg, and mix to combine.

In a small bowl, combine coconut flour, arrowroot, salt, black pepper and onion powder.

Dump dry ingredients into the large bowl. Mix to combine.

In a frying pan, melt coconut oil over medium heat.

Using your hands, form about 2-3 tbsp of the fritter mixture into balls then flatten gently.

Drop fritters into hot oil and fry for about 3–4 minutes on each side, until browned and crisp.
