Combine cabbage and cranberries in a large bowl. Combine rice vinegar, fructose, olive oil, salt and pepper in a separate bow, stirring with a whisk. Drizzle dressing mixture over cabbage mixture, tossing gently to coat. Cover and chill 2 hours. Before serving, add apple and toss well to combine. Sprinkle with pecans.
