Preheat oven and cookie sheet to 350° F. Combine almonds and cashews in a bowl; then add olive oil and mix well. Sprinkle in salt, cayenne pepper, Italian seasoning, onion powder and garlic powder and combine with nut and oil mixture. Spread on preheated cookie sheet. Roast for 12 minutes, stirring mixture halfway through baking time. Remove from oven and cool. Serve immediately or place in an airtight container or storage bag. Nut mixture will retain freshness for up to 2 weeks when stored in a cool, dry place.
Note: You may use any organic nut you would like.
