Combine nonfat milk with lemon juice. Set aside.

Beat egg whites well, and then add date sugar, fructose and applesauce. Add in vanilla, zucchini, carrots, cranberries and the milk/lemon mixture. Mix well.

Combine flour, cinnamon, baking soda and salt in a separate bowl. Add the dry mixture to the wet mixture and stir until well blended.

Pour into a greased 9 x 13 pan. Sprinkle some extra fructose and cinnamon on top if desired. Bake at 350° F for 25-30 minutes.
