In a medium bowl, beat egg white and water until frothy. Add nuts and toss to coat. In a large plastic bag, combine the stevia and spices. Note: to customize the taste or spiciness, you may increase, decrease or omit the spices. Add nuts to the bag by hand, leaving any unused egg mixture in bowl. Shake bag well to coat nuts with spice thoroughly. Spread nuts evenly on an ungreased 15 x 10 baking sheet. Bake at 300° F for 35 to 40 minutes, stirring every 10 to 15 minutes. Remove from oven and transfer to a sheet of foil to cool completely. Break apart nuts, if needed. Store in airtight containers, freezing extras up to 3 months.
