Heat oven to 350° F. Line a Bundt pan with parchment paper.

In a medium-sized bowl, mix oil, fructose, honey and eggs until combined. In a food processor, combine orange and apple, pulsing until finely chopped. Pulse in coffee until mostly pureed. In a separate bowl, sift together the flour, baking soda, baking powder, spices and salt.

Add a third of fruit and coffee mixture to oil, honey, and egg mixture. Add in a third of the flour mixture and mix until well blended. Repeat until all ingredients are combined. Stir in raisins. Pour batter into pan.

Bake for 40 minutes or until tester comes out clean. Cool in pan on rack. Remove from pan and sprinkle with powdered sugar.

Makes 14 servings. Serving size 1.0 slice.
