Pre-heat oven to 350° F. Grease a 11 x 7 pan with coconut oil. Beat butter and cream cheese in a mixing bowl with an electric mixer. Blend until light and fluffy. Add eggs one at a time. Beat well. Add xylitol and vanilla extract, and continue mixing. Beat in coconut flour until well blended. Pour batter into pre-greased pan; bake for 30 minutes. Cool the pan on a wire rack for 10 minutes. Cut into squares and top each one with fresh berries.
XYLITOL WARNING FOR DOGS
Do not feed anything containing xylitol to your dog or any other pet. While xylitol is healthy and safe for humans, it is metabolized differently in canines, causing a potentially fatal drop in blood sugar. It is also toxic to the canine liver. No matter how much Baxter begs, do not hand-feed treats with xylitol to him, and store goodies out of his reach.
